Jamaican Curried Goat

Ingredients

  • 4lbs Goat meat

  • 1 tsp. salt (more or less depending on taste)

  • 4 tbsp. curry powder ( 2 goes on the meat and 2 for toasting)

  • 2 tbsp. dry jerk seasoning

  • 1 tbsp. seasoning salt

  • 1 tsp. black pepper

  • 4 cloves garlic chopped or slice

  • scotch bonnet pepper ( to taste)

  • 1 large onion chopped

  • 4 stark green onion

  • 4 sprig of thyme

  • 4 tbsp. oil

  • 2 cups diced potatoes (optional, but recommended)

Directions

  • wash meat thoroughly with vinegar and/ or lime juice
  • add powdered seasoning along with chopped garlic and scotch bonnet pepper.
  • heat oil in a heavy bottom pot and add curry (do this on low heat because curry burn easily and you don’t want burnt curry.)
  • add meat to the toasted curry, sauté for about 5 minutes. add water to cover meat and let simmer on low to medium heat until meat is tender. this step will require you adding more water as needed occasionally.
  • when meat is tender, add in chopped onions, green onions, thyme and potato. simmer until potatoes are tender.
  • serve with plain rice or rice and peas
