Escovitch shrimp

Ingredients

  • 1/2 lb shrimp

  • 1/4 tsp black pepper

  • 1/4 tsp salt

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/4 tsp cayenne powder

  • 2 tbsp of buttermilk

  • oil for frying

  • Breading
  • 1/2 cup flour

  • 2 tbsp cornstarch

  • 1/2 tsp baking powder

  • same spices used for the shrimp

  • escovitch sauce
  • 1/2 cup white vinegar

  • Onion, julienne

  • carrots, julienne

  • Scotch bonnet pepper

  • few pimento seed

  • bell peppers, optional

Directions

  • Wash and peel shrimp, leave tail on and season with all the spices listed and the buttermilk.
  • Combine the dry ingredients for the breading and coat shrimps properly. Let the shrimp rest with the breading for a few minutes to ensure coating sticks
  • Heat oil and fry the shrimps for about 2 minutes on each side. Be sure to keep the temp on a medium to high eat because shrimps cook rather quickly so we want to ensure crispness without overlooking.
  • Remove shrimp from heat and drain on paper towel.
  • For the sauce, add your vinegar and slice veggies and simmer for about 5 mins just until the veggies are tender.
