Pumpkin rice

Ingredients

  • 2 cups rice

  • 1 cup pumpkin, diced small

  • onion, diced

  • Green onion, chopped

  • few sprig of thyme

  • 1 chicken bouillon

  • 3 cups water

  • 4 tbsp butter

Directions

  • In a pot, melt 2 tbsp butter, add in chopped onion, green onion pumpkin saute until onions are translucent.
  • Add in water, dissolve the bouillon in the water and let the pumpkin cook for about 10 minutes.
  • Add in washed rice thyme and the remaining butter. Let the rice simmer on medium heat until the liquid as evaporated.
  • Once the liquid as evaporated, turn the heat don’t to extermly low and let the rice steam for about 10 to 15 mins or until the rice is tender.
  • Remove from heat and serve with you favorite dish. This pairs well with just about any protien. Even by itself as its very flavorful
