Jalapeno Mac & Cheese

Ingredients

  • 1 lb elbow pasta

  • 2 Tbsp. butter

  • 2 Tbsp. flour

  • 1 cup milk

  • 1 cup heavy cream

  • 4 cups extra sharp cheddar cheese

  • 2 cups pepper jack cheese

  • 2 tsp. finely chopped jalapenos (optional)

  • 2 cups mozzarella cheese

  • 1/4 tsp paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • salt for boiling the pasta

Directions

  • cook pasta in a sauce pan until slightly less than al-dente. remove from boiling water and set aside until ready to combine with cheese sauce.
  • in a separate saucepan, melt butter and stir in flour to make a roux.
    stir constantly for about 3 mins until flour is cooked.
  • stir or whisk in milk slowly until flour & milk mixture is completely smooth. pour in heavy cream.
  • add in 2 cups of the cheddar cheese, 1 cup of the pepper jack cheese, keep the remainder for mixing and topping the pasta.
  • stir cheese sauce until cheese is completely melted.
  • in a bakeware or foil container add cooked pasta, then pour in cheese sauce and 1 cup of cheddar cheese, 1 cup of mozzarella and the remaining 1 cup of pepper jack cheese. mix until combined. add in paprika, diced jalapenos, onion powder & garlic powder, mix until spices are properly combined.
  • top the pasta mixture with the remaining cheddar cheese and mozzarella cheese. bake at 370F for 20 mins then up the temperature to 400F and bake for another 20mins or until golden crust is achieved.
  • Serve up at your favorite get together or Sunday dinner. enjoy.
