chicken chop suey

Ingredients

  • 1 1/2 lbs chicken thigh ( boneless & skinless)

  • 3/4 tsp salt

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tbsp. chicken seasoning

  • 1/4 tsp paprika

  • 1/2 onion, chopped

  • 2 starks green onion, chopped

  • few sprigs of thyme

  • pieces of scotch bonnet, as much as you can handle

  • 2 cloves of garlic, chopped

  • small piece of ginger, sliced

  • 2 tbsp. soy sauce

  • 1 tbsp. oyster sauce

  • 1 small head of cabbage, rough chopped

  • 6 head of baby bok choy ( about a pound, they’re very small )

  • 2 medium carrots, julienne

  • oil

Directions

  • Wash and cut chicken into bite size strips. season chicken with powdered seasonings.
  • heat oil in a wok or a big enough pan to stir fry meat and veggies without over crowding. Add in seasoned chicken and cook for 15 mins, uncovered.
  • Add in onion, garlic, garlic, green onion, thyme, ginger, soy sauce and oyster sauce, stir fry for about 2 mins.
  • Gradually add in chopped veggies and stir until veggies are tender but still has a little crunch to it. Remove from heat and serve with plain rice. enjoy
