Jamaican Beef Soup

This soup is a rich flavorful soup made from beef, pumpkin, dumplings and Caribbean yellow yams.

Ingredients

  • 2lbs beef ( stew, soup bone or chuck will do)

  • 1lb cowfoot (optional)

  • 1lb pumpkin diced

  • 2 medium sized carrots diced

  • 2 beef bouillon

  • 2 corn on the cob , cut into small pieces

  • dumplings

  • yellow yams, cut into small pieces

  • grace pumpkin noodle mix

  • scallion

  • thyme

  • 1 whole scotch bonnet pepper

  • few pimento seeds

  • salt to taste

  • pinch of black pepper

  • dumpling ingredients
  • 1 cup all purpose flour

  • 2 tbsp. cornmeal (optional)

  • a sprinkle of salt

Directions

  • wash meats with vinegar and lime and place in a pressure cooker with diced pumpkin, carrots, bouillon and enough water to cover the meat and veggies. Cook for about 45 mins to an hour depending an how your pressure cooker perform. I used an instant pot for 45 mins.
  • After meat is tender, remove from pressure cooker and place in a stock pot.
  • To make dumplings, add flour, cornmeal and salt to a mixing bowl. add enough water to form a soft dough.
  • Shape dumpling into a small ball and press the center slightly with your thumb. place dumplings into the stock pot.
  • Add the yams to the stock pot and let cook for 15 mins.
  • Add corn, scallion, thyme, scotch bonnet pepper, pimento seed, salt, pepper and noodle mix and cook for another 15 mins or until the soup thickens to your liking, stirring regularly to avoid burning the noodles.
  • you’re ready to serve.
