Jamaican Curried Goat
Ingredients
4lbs Goat meat
1 tsp. salt (more or less depending on taste)
4 tbsp. curry powder ( 2 goes on the meat and 2 for toasting)
2 tbsp. dry jerk seasoning
1 tbsp. seasoning salt
1 tsp. black pepper
4 cloves garlic chopped or slice
scotch bonnet pepper ( to taste)
1 large onion chopped
4 stark green onion
4 sprig of thyme
4 tbsp. oil
2 cups diced potatoes (optional, but recommended)
Directions
- wash meat thoroughly with vinegar and/ or lime juice
- add powdered seasoning along with chopped garlic and scotch bonnet pepper.
- heat oil in a heavy bottom pot and add curry (do this on low heat because curry burn easily and you don’t want burnt curry.)
- add meat to the toasted curry, sauté for about 5 minutes. add water to cover meat and let simmer on low to medium heat until meat is tender. this step will require you adding more water as needed occasionally.
- when meat is tender, add in chopped onions, green onions, thyme and potato. simmer until potatoes are tender.
- serve with plain rice or rice and peas
