Escovitch shrimp
Ingredients
1/2 lb shrimp
1/4 tsp black pepper
1/4 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cayenne powder
2 tbsp of buttermilk
oil for frying
- Breading
1/2 cup flour
2 tbsp cornstarch
1/2 tsp baking powder
same spices used for the shrimp
- escovitch sauce
1/2 cup white vinegar
Onion, julienne
carrots, julienne
Scotch bonnet pepper
few pimento seed
bell peppers, optional
Directions
- Wash and peel shrimp, leave tail on and season with all the spices listed and the buttermilk.
- Combine the dry ingredients for the breading and coat shrimps properly. Let the shrimp rest with the breading for a few minutes to ensure coating sticks
- Heat oil and fry the shrimps for about 2 minutes on each side. Be sure to keep the temp on a medium to high eat because shrimps cook rather quickly so we want to ensure crispness without overlooking.
- Remove shrimp from heat and drain on paper towel.
- For the sauce, add your vinegar and slice veggies and simmer for about 5 mins just until the veggies are tender.
