Herb Roasted Chicken
This moist and flavorful roasted chicken recipe will have you serving this at every Sunday dinner. Its bursting with herbs and spices.
Ingredients
1 5lbs. Whole chicken
1 1/2 tsp. salt
2 tsp. dry jerk seasoning
1 tsp adobo seasoning
1 tsp. Garlic powder
1 tsp. Onion powder
1/2 tsp. Black pepper
2 tsp. Smoked paprika
3 tbsp. Garlic herb blend ( garlic, basil, rosemary & oil blended)
1 tsp soy sauce
Directions
- Remove the backbone section of the chicken by using a sharp knife or scissors to along the thigh and wing section. Wash and clean any excess fat from the chicken.
- Combine all the powdered seasonings in a small container, then sprinkle over chicken. ensure that the spices are evenly distributed over the chicken. Then add 2 tbsp. of the garlic herb blend and combine thoroughly. Allow this to marinate for a few hours, overnight if the time allows.
- Preheat oven to 350 degree. place chicken in a roasting pan rib side down, pour about a 1/4 cup of water on the base of the pan to help keep the chicken moist as well as to use for basting. Bake for about 1 hour 2-3 times throughout.
- After an hour of baking, mix the remainder of the garlic herb blend with the soy sauce and gentle brush the mixture over the chicken. Bake for 15 minutes then brush again and bake for a final 15 mins or until the desired color is reached. Your chicken should be fully cooked at about 1 hr and 15 mins in, so any additional time after that is just for color. you can also use a thermometer to check the doneness.
- After the desired color is reached, serve and enjoy.
