Tuscan Salmon
Directions
- Clean and cut salmon into portion sizes, about 4 to 5 oz each. Season salmon with the powdered seasonings listed.
- In a non stick pan, melt butter and add salmon once the butter is thoroughly melted and pot is hot enough for searing.
- Cook salmon for 3 to 4 mins on each side. Time will vary base on salmon thickness. Don’t over cook your salmon. Remember it’s going to simmer for a while in the cheese sauce later.
- Once salmon is done, remove from heat and set aside. To the same pot, add chopped garlic, grape tomatoes and cook until tomatoes are slightly withered, then add spinach leaves and cook until leaves are slightly withered as well.
- Add cream and cheese stir constantly over low heat until sauce thickens. Add some extra Italian herbs and salt to suit your taste. (You can use a blend of cheese as well, such as Parmesan & Romano or Parmesan and Fontina)
- Add cooked salmon to the cream sauce and simmer for about 5 minutes. Serve with pasta or over creamy Mashed potatoes.

1 lb Salmon
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp old bay seasoning
1/2 tsp salt
1/2 tsp Cajun seasoning
1/2 tsp Cayenne Pepper
1/2 tsp Italian herbs
1 tbsp butter
3 cloves garlic (chopped finely)
1/2 cup of grape tomatoes
handful or 2 of fresh spinach leaves
1.5 cup of heavy cream
4 oz Parmesan cheese
